The Ryan and the Miles have a little razorback aft of the cockpit so probably not them. If I had to guess I'd say the de Havilland.

Apparently, the pilot is Richard Perlia (German wiki page, translated).
The stuntman appears to be Fritz Schindler . One site identifies the plane as a "Klemp plane." No idea. I think it's pretty clear from the picture below that both were staged on the ground.

Nice find. Looks like smallbear's guess is correct. Seems to be a Klem L20 made by Daimler Motors.

Interesting. I've been doing some more digging on Schindler, and I really wish my German were better. I found this site with some history of Tempelhof, and Schindler figures prominently in it. It describes a stunt where he was plucked out of a moving car, an Austro-Daimler, which was, interestingly, driven by a man named Hans Stuck. I don't imagine that is a coincidence. This has the makings of a very interesting article, if you can handle the German.
This looks like a PDF of the Schindler portion of the above site, but it also includes references. I wish I had more time to research this, but I'm leaving town soon and I've spent too much time on this already!
